Ensaymada is a delightful Filipino bread that’s soft, sweet, and buttery, often enjoyed as a treat for breakfast or a snack. Its spiral shape and rich flavor make it a beloved pastry in Filipino households and beyond.
Ingredients:
- For the Dough:
- 4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1 cup whole milk, warmed
- 1/2 cup unsalted butter, softened
- 2 large eggs
- For the Topping:
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup grated cheese (preferably a sharp cheese like cheddar)
- Extra granulated sugar for sprinkling
Instructions:
- Prepare the Dough: In a large bowl, combine the flour, sugar, yeast, and salt. Make a well in the center and pour in the warmed milk, softened butter, and eggs. Mix until a dough forms, then knead on a lightly floured surface for about 8-10 minutes, or until the dough is smooth and elastic.
- First Rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
- Shape the Dough: Punch down the dough and divide it into equal portions. Roll each portion into a rectangle, spread a thin layer of softened butter over the surface, then roll it up tightly. Shape the roll into a spiral or coil and place it onto a greased baking tray. Repeat with the remaining dough.
- Second Rise: Cover the shaped dough with a cloth and let it rise for another 30 minutes, or until puffed.
- Bake: Preheat the oven to 350Β°F (175Β°C). Bake the Ensaymadas for 20-25 minutes, or until they are golden brown.
- Add Toppings: While still warm, spread softened butter over the top of each roll, sprinkle with sugar, and sprinkle with grated cheese.
- Serve: Allow the Ensaymadas to cool slightly before serving. Enjoy the warm, buttery, and slightly sweet treat with a cup of coffee or tea.
