Chicken Fried Rice Recipe
Ingredients:
- 2 cups cooked white rice (preferably day-old)
- 1 lb boneless, skinless chicken breasts, diced
- 2 tablespoons vegetable oil, divided
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 2 large eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 teaspoons sesame oil
- Salt and pepper, to taste
- 3 green onions, sliced
- Optional: 1 teaspoon ginger, minced
Instructions:
- Prepare the Rice:
- If using fresh rice, spread it on a baking sheet to cool and dry out slightly. Day-old rice works best for fried rice as it’s less sticky.
- Cook the Chicken:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper. Remove the chicken from the skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the diced onion and cook until translucent, about 3 minutes. Add the garlic (and ginger, if using) and cook for another 30 seconds.
- Add the Eggs:
- Push the onions and garlic to the side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Mix the eggs with the onions and garlic.
- Combine Ingredients:
- Add the cooked rice, thawed peas and carrots, and cooked chicken back into the skillet. Pour the soy sauce, oyster sauce (if using), and sesame oil over the mixture. Stir well to combine and cook until everything is heated through, about 3-4 minutes.
- Finish and Serve:
- Taste and adjust the seasoning with more soy sauce, salt, or pepper if needed. Stir in the sliced green onions. Serve hot.
