Ingredients:
For the Fritters:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups apples, peeled and diced (use a sweet variety like Honeycrisp or Fuji)
- Vegetable oil for frying
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat the eggs and then add the milk and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix.
- Gently fold in the diced apples.
- Heat vegetable oil in a deep fryer or a heavy-bottomed pan to 350Β°F (175Β°C).
- Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the fritters. Fry until they are golden brown on both sides, turning as needed. This should take about 2-3 minutes per side.
- Remove the fritters from the oil using a slotted spoon and place them on paper towels to drain any excess oil.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
- While the fritters are still warm, dip each one into the glaze, coating it evenly.
- Allow the glaze to set for a few minutes before serving.
