Recipe :
Ingredients:
- 8 oz (about 225g) linguine pasta
- 1 pound (about 450g) fresh or frozen calamari, cleaned and sliced into rings
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup dry white wine
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Red pepper flakes (optional, for some heat)
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving
Instructions:
- Cook the linguine pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet or pan, heat olive oil over medium heat. Add chopped onion and sautΓ© until it becomes translucent.
- Add minced garlic and sautΓ© for another 1-2 minutes until fragrant.
- Add the sliced calamari to the pan and cook for 2-3 minutes until they turn opaque and start to curl. Be careful not to overcook them, as they can become tough.
- Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
- Add the crushed tomatoes, dried oregano, dried basil, salt, pepper, and red pepper flakes (if using). Stir well to combine.
- Simmer the sauce for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken.
- Taste and adjust the seasoning if necessary.
- Add the cooked linguine to the pan, tossing to coat the pasta evenly with the sauce and calamari.
- Serve the linguine in tomato sauce with calamari in bowls, garnished with fresh parsley and grated Parmesan cheese.
