Ingredients:
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 1 cup sour cream
- 3 cups crushed tortilla chips
- 2 cups shredded cheddar cheese
- Fresh cilantro, chopped (optional, for garnish)
- Jalapeรฑo slices (optional, for added heat)
Instructions:
- Preheat your oven to 350ยฐF (175ยฐC).
- In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain any excess grease.
- Add the taco seasoning mix to the skillet, following the package instructions. If you’re using homemade taco seasoning, add about 2-3 tablespoons along with water as directed.
- Stir in the black beans, corn, and salsa. Cook for a few minutes until the mixture is heated through.
- In a greased 9×13-inch baking dish, spread a layer of crushed tortilla chips.
- Spoon half of the beef mixture over the layer of chips.
- Dollop half of the sour cream over the beef mixture, spreading it out as evenly as possible.
- Sprinkle half of the shredded cheddar cheese on top.
- Repeat the layers with the remaining crushed tortilla chips, beef mixture, sour cream, and shredded cheddar cheese.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with chopped cilantro and jalapeรฑo slices if desired.
