Vegetable Hamburger Soup

Ingredients:
- 1 lb (450g) ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups (950ml) beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups (480ml) water
- 2 medium carrots, sliced
- 2 medium potatoes, peeled and diced
- 1 cup green beans, trimmed and chopped
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup peas (fresh, frozen, or canned)
- 1 zucchini, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Optional: 1 tablespoon tomato paste for a richer flavor
Instructions:
- Cook the Ground Beef:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break it up into small pieces as it cooks. Drain excess fat if necessary.
- Add Aromatics:
- Add the diced onion and minced garlic to the pot. Cook for about 5 minutes, until the onion is soft and translucent.
- Add Liquids:
- Pour in the beef broth, water, and diced tomatoes (including the juice). If using, stir in the tomato paste.
- Add Vegetables:
- Add the sliced carrots, diced potatoes, green beans, corn, peas, and zucchini. Stir to combine.
- Season:
- Stir in the dried thyme, dried basil, salt, and pepper. Adjust the seasoning to your taste.
- Simmer:
- Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the vegetables are tender.
- Serve:
- Taste the soup and adjust seasoning if needed. Serve hot, with a side of crusty bread if desired.
