These vegan meatballs with gravy are a comforting and hearty dish that will satisfy even the most skeptical of eaters. The combination of black beans, breadcrumbs, and spices creates a texture and flavor reminiscent of traditional meatballs, while the rich, velvety gravy adds a luxurious finish.
Ingredients:
For the Vegan Meatballs:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs (gluten-free if needed)
- 1/4 cup nutritional yeast
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce or tamari
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
For the Gravy:
- 2 tablespoons vegan butter or olive oil
- 2 tablespoons all-purpose flour (or gluten-free flour)
- 2 cups vegetable broth
- 1 tablespoon soy sauce or tamari
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions:
1. Prepare the Vegan Meatballs:
- In a large bowl, mash the black beans until mostly smooth, leaving some chunks for texture.
- Add the breadcrumbs, nutritional yeast, chopped onion, minced garlic, soy sauce, flax egg, oregano, smoked paprika, salt, and pepper. Mix until well combined.
- Form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet.
- Heat a bit of olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 8-10 minutes. Alternatively, you can bake them at 375Β°F (190Β°C) for 20-25 minutes, turning halfway through.
2. Make the Gravy:
- In a saucepan, melt the vegan butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in the vegetable broth, making sure there are no lumps.
- Add the soy sauce, Dijon mustard, onion powder, salt, and pepper. Continue to cook, whisking constantly, until the gravy thickens, about 5 minutes.
- Taste and adjust seasoning as needed.
3. Serve:
- Plate the vegan meatballs and generously drizzle the gravy over them. Serve with mashed potatoes, roasted vegetables, or your favorite side dishes.
