Veal Piccata Recipe
Ingredients:
- 1 lb veal cutlets (about 4-6 pieces)
- Salt and freshly ground black pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/3 cup dry white wine
- 1/2 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1/4 cup capers, drained
- 2 tablespoons fresh parsley, chopped
- Lemon slices, for garnish (optional)
Instructions:
- Prepare the Veal:
- Place each veal cutlet between two pieces of plastic wrap and gently pound with a meat mallet to about 1/4-inch thickness. Season both sides with salt and pepper.
- Dredge the Veal:
- Place the flour in a shallow dish. Dredge each cutlet in the flour, shaking off any excess.
- Cook the Veal:
- In a large skillet, heat 2 tablespoons of butter and the olive oil over medium-high heat. Once the butter has melted and the oil is hot, add the veal cutlets to the pan in a single layer (work in batches if necessary to avoid overcrowding).
- Cook the cutlets for about 2-3 minutes per side, until golden brown and cooked through. Transfer the cooked veal to a plate and cover with foil to keep warm.
- Make the Sauce:
- In the same skillet, add the white wine, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let the wine simmer for about 1-2 minutes until reduced by half.
- Add the chicken broth, lemon juice, and capers to the skillet. Bring to a simmer and cook for another 2 minutes.
- Stir in the remaining 2 tablespoons of butter until melted and the sauce is slightly thickened.
- Finish and Serve:
- Return the veal cutlets to the skillet, spooning some of the sauce over the top. Cook for an additional minute to heat through.
- Transfer the veal to serving plates, spoon the sauce over the top, and garnish with fresh parsley and lemon slices if desired.
