Sticky toffee pudding is a classic British dessert that’s rich, sweet, and utterly indulgent. Here’s a traditional recipe for you:
Ingredients:
For the pudding:
- 200g (1 cup) pitted dates, chopped
- 1 teaspoon baking soda
- 250ml (1 cup) boiling water
- 75g (1/3 cup) unsalted butter, softened
- 175g (3/4 cup) brown sugar
- 2 large eggs
- 175g (1 1/3 cups) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
For the toffee sauce:
- 200g (1 cup) brown sugar
- 100g (1/2 cup) unsalted butter
- 150ml (2/3 cup) heavy cream
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 180Β°C (350Β°F). Grease a 9-inch square baking dish or individual ramekins.
- In a small bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them sit for about 10 minutes to soften.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, until well incorporated. Stir in the vanilla extract.
- Gradually add the flour and baking powder to the wet mixture, mixing until just combined.
- Fold in the softened dates along with any remaining water from the bowl. Mix until evenly distributed.
- Pour the pudding batter into the prepared baking dish or ramekins, spreading it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the pudding is firm to the touch and a skewer inserted into the center comes out clean.
- While the pudding is baking, prepare the toffee sauce. In a saucepan over medium heat, melt the butter and brown sugar together, stirring constantly until the sugar has dissolved and the mixture is smooth.
- Slowly pour in the heavy cream, stirring continuously, until the sauce is thick and glossy.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Once the pudding is done baking, remove it from the oven and let it cool for a few minutes.
- Serve the warm pudding drizzled with the hot toffee sauce. You can also serve it with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
Enjoy your sticky toffee pudding!
