Here’s a delicious recipe for shrimp pasta with vodka sauce:
Ingredients:
- 1 pound shrimp, peeled and deveined
- 1 pound pasta (such as penne or fettuccine)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup vodka
- 1 can (28 ounces) crushed tomatoes
- 1 cup heavy cream
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Grated Parmesan cheese for serving
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion and cook until softened, about 3-4 minutes.
- Add the shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Deglaze the skillet by pouring in the vodka, stirring to scrape up any browned bits from the bottom of the pan. Allow the vodka to cook for 2-3 minutes, until reduced by half.
- Stir in the crushed tomatoes and bring the sauce to a simmer. Let it cook for about 10 minutes, stirring occasionally, until slightly thickened.
- Reduce the heat to low and stir in the heavy cream. Add the red pepper flakes if using, then season with salt and pepper to taste.
- Return the cooked shrimp to the skillet and stir to combine with the sauce. Let it simmer for another 2-3 minutes to heat the shrimp through.
- Add the cooked pasta to the skillet and toss to coat it evenly with the sauce.
- Serve the shrimp pasta with vodka sauce hot, garnished with fresh basil or parsley and grated Parmesan cheese.
Enjoy your delicious shrimp pasta with vodka sauce!
