Potato and Fresh String Bean Salad Recipe
Ingredients:
- For the Salad:
- 1 pound (450g) baby potatoes, halved or quartered if large
- 1 pound (450g) fresh string beans, trimmed and cut into 1-inch pieces
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup sliced black olives (optional)
- For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon honey
- Salt and freshly ground black pepper, to taste
Instructions:
- Cook the Potatoes:
- Place the halved potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
- Bring to a boil over medium-high heat and cook until the potatoes are tender, about 10-15 minutes. Check with a fork.
- Drain the potatoes and set them aside to cool.
- Cook the String Beans:
- In the same pot, bring water to a boil again. Add the string beans and blanch them for 2-3 minutes until they are tender-crisp and bright green.
- Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process. This helps to maintain their vibrant color.
- Drain again and pat dry with a clean towel.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper until well combined.
- Assemble the Salad:
- In a large mixing bowl, combine the cooled potatoes, string beans, cherry tomatoes, red onion, and parsley.
- Pour the dressing over the salad and toss gently to combine.
- If desired, add the crumbled feta cheese and sliced black olives, and toss again.
- Serve:
- Let the salad sit for at least 15 minutes before serving to allow the flavors to meld. You can serve it at room temperature or chilled.
- Storage:
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. The salad might taste even better the next day as the flavors continue to develop.
