Peppers & potatoes – Dad made this every Sunday. It would sit on the stovetop all day with a load of homemade bread nearby.
ngredients:
- 4 medium potatoes, diced
- 2 bell peppers (any color), sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Vegetables:
- Wash and dice the potatoes into small cubes (about 1-inch pieces).
- Slice the bell peppers into strips, and slice the onion.
- Cook the Potatoes:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced potatoes and season with salt, pepper, paprika, and garlic powder.
- Cook the potatoes, stirring occasionally, until they are golden brown and crispy on the outside, about 10-15 minutes. You can cover the skillet with a lid to speed up the cooking process, but make sure to stir often.
- Add the Peppers and Onions:
- Once the potatoes are nearly cooked, push them to the side of the skillet.
- Add the remaining 1 tablespoon of olive oil and toss in the sliced bell peppers and onions.
- Season with dried oregano and a little more salt and pepper.
- SautΓ© the peppers and onions until they are softened and slightly caramelized, about 5-7 minutes.
- Combine and Serve:
- Mix the potatoes with the sautΓ©ed peppers and onions until everything is well combined.
- Cook for an additional 2-3 minutes to let the flavors meld together.
- Garnish with fresh parsley if desired, and serve hot.
This dish pairs wonderfully with grilled meats or can be enjoyed on its own as a hearty side dish!
