Ingredients:
- For the Pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- For the Filling:
- 1/2 cup cooked ham, finely diced
- 1/2 cup shredded cheese (cheddar, Swiss, or your favorite)
Instructions:
- Prepare the Pancake Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Donβt overmix; a few lumps are okay.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Sprinkle some diced ham and shredded cheese onto the surface of each pancake while the batter is still wet.
- Cook until bubbles start to form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 2 minutes until golden brown and the cheese is melted.
- Serve:
- Serve the pancakes warm with a drizzle of maple syrup or a dollop of sour cream for a savory twist. You can also pair them with scrambled eggs or a fresh salad for a complete meal.
