The essence of summer is captured perfectly in this light and airy Mango Mousse. Each spoonful is a tropical escape, with the rich creaminess of whipped cream balancing the vibrant sweetness of fresh mangoes.
Ingredients:
- 2 ripe mangoes, peeled and pureed
- 1 cup heavy whipping cream
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 tbsp gelatin
- 2 tbsp cold water
- Fresh mango slices for garnish (optional)
Instructions:
- Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom. Once bloomed, microwave the mixture for about 10-15 seconds until the gelatin is fully dissolved.
- Make the Mango Puree: In a blender, puree the ripe mangoes until smooth. You should have about 1 cup of mango puree. Add the dissolved gelatin to the mango puree and mix well.
- Whip the Cream: In a large mixing bowl, whip the heavy cream, sugar, and vanilla extract together until soft peaks form.
- Combine: Gently fold the mango puree into the whipped cream until fully incorporated. Be careful not to deflate the mousse by overmixing.
- Chill: Spoon the mango mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours or until the mousse is set.
- Garnish and Serve: Before serving, garnish with fresh mango slices or a sprig of mint if desired.
