Ingredients:
- 1 cup heavy cream
- 3 tablespoons unsweetened cocoa powder
- 2 tablespoons powdered erythritol (or your preferred low-carb sweetener, to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Whip the Cream: In a mixing bowl, use an electric mixer to whip the heavy cream until soft peaks form.
- Mix Cocoa Powder and Sweetener: In a separate bowl, combine the unsweetened cocoa powder, powdered erythritol, and a pinch of salt.
- Combine Ingredients: Gently fold the cocoa mixture into the whipped cream. Add the vanilla extract and continue to fold until well combined and smooth.
- Chill: Spoon the mousse into serving dishes and refrigerate for at least 1 hour to set.
- Serve: Garnish with a few shavings of dark chocolate or a sprinkle of cocoa powder if desired.
