- 1 tablespoon lemon zest
- 3/4 cup (150g) granulated sugar
- 3 large eggs
- 1/2 cup (1 stick, 115g) unsalted butter, cut into small pieces

- In a medium heatproof bowl, whisk together lemon juice, lemon zest, sugar, and eggs.
- Place the bowl over a saucepan of simmering water, ensuring the bowl doesnβt touch the water.
