Hot crumpets with Lurpak butter are a classic treat, perfect for a cozy breakfast or afternoon tea. Here’s a simple recipe to make your own:
Ingredients:
- 250g (2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 sachet (7g) dried yeast
- 250ml (1 cup) warm milk
- 125ml (1/2 cup) warm water
- Lurpak butter, for serving
Instructions:
- In a large mixing bowl, combine the flour, baking powder, salt, and sugar.
- In a separate small bowl, mix the dried yeast with the warm water. Let it sit for a few minutes until it becomes frothy.
- Pour the warm milk into the dry ingredients, followed by the yeast mixture. Stir until you have a smooth batter. It should be thick but pourable. If it’s too thick, you can add a little more warm water.
- Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 30-45 minutes, or until it has doubled in size and is bubbly.
- Heat a non-stick frying pan or griddle over medium heat. Lightly grease the pan with a little butter.
- Using a ladle or large spoon, pour small circles of batter onto the hot pan, making sure to leave some space between each one as they will expand. Cook for 2-3 minutes, or until bubbles start to form on the surface of the crumpets and the edges look set.
- Carefully flip the crumpets over using a spatula and cook for another 1-2 minutes on the other side, until golden brown and cooked through.
- Remove the crumpets from the pan and serve immediately with generous slabs of Lurpak butter while they’re still warm.
Enjoy your homemade hot crumpets with the delicious richness of Lurpak butter melting on top!
