Homemade Monkey Butter
Ingredients:
- 2 ripe bananas
- 1 cup crushed pineapple (drained)
- 1 cup shredded coconut (sweetened or unsweetened, depending on your preference)
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1/4 teaspoon vanilla extract (optional)
- 1/4 teaspoon ground cinnamon (optional)
Instructions:
- Prepare Ingredients: Peel the bananas and mash them in a bowl. Drain the crushed pineapple well to remove excess moisture.
- Cook the Mixture:
- In a medium saucepan, combine the mashed bananas, drained pineapple, shredded coconut, and granulated sugar.
- Cook over medium heat, stirring frequently, until the mixture starts to thicken (about 10-15 minutes).
- Add Flavorings:
- Once the mixture has thickened, stir in the lemon juice. If youβre using vanilla extract and/or ground cinnamon, add them now and mix well.
- Cool and Store:
- Remove the saucepan from heat and let the monkey butter cool to room temperature.
- Transfer the cooled monkey butter to a clean jar or airtight container. Store in the refrigerator for up to 2 weeks.
