Garlic Herb Butter Steak Recipe
Ingredients:
- Steak:
- 2 ribeye or New York strip steaks (about 1 inch thick)
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- Garlic Herb Butter:
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper, to taste
Instructions:
- Prepare the Garlic Herb Butter:
- In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, and parsley.
- Add a pinch of salt and pepper to taste.
- Mix well until all the herbs and garlic are evenly distributed throughout the butter.
- Transfer the garlic herb butter onto a piece of plastic wrap, shape it into a log, and refrigerate until firm (about 30 minutes).
- Prepare the Steaks:
- Take the steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking.
- Pat the steaks dry with paper towels, and season both sides generously with salt and black pepper.
- Cook the Steaks:
- Preheat a cast-iron skillet or heavy-bottomed pan over high heat until very hot.
- Add the olive oil to the skillet.
- Once the oil is shimmering, carefully place the steaks in the skillet. Cook without moving them for about 3-4 minutes on each side, or until a crust forms and the steaks reach your desired level of doneness (medium-rare is about 130-135Β°F).
- If your steaks are particularly thick, you may need to also sear the edges for about 1 minute per side.
- Finish with Garlic Herb Butter:
- Reduce the heat to medium-low.
- Add a couple of tablespoons of the garlic herb butter to the skillet.
- Use a spoon to baste the steaks with the melted butter and garlic herb mixture, tilting the pan to scoop up the butter and pour it over the steaks repeatedly.
- Cook for an additional minute while basting, ensuring the steaks are coated with the buttery herb mixture.
- Rest and Serve:
- Remove the steaks from the skillet and place them on a cutting board.
- Allow the steaks to rest for about 5 minutes. This helps the juices redistribute throughout the meat.
- Slice the steaks against the grain and serve with an additional dollop of garlic herb butter on top for extra flavor.

- For a richer flavor, you can marinate the steaks with a bit of olive oil, garlic, and herbs a few hours before cooking.
- If you prefer a different level of doneness, adjust the cooking time accordingly and use a meat thermometer to check the internal temperature.
