Here’s a simple and delicious egg puff recipe, perfect for a snack or a light meal. Egg puffs are a popular pastry in many parts of the world, especially in South Asia.
Ingredients
- 4 large eggs
- 1 sheet of puff pastry (store-bought or homemade)
- 1 medium onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chili, finely chopped (optional, for heat)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 tablespoon oil
- Fresh cilantro, chopped (for garnish)
- 1 egg (for egg wash)
- Flour (for dusting)
Instructions
- Boil the Eggs:
- Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and let them simmer for 9-10 minutes. Remove the eggs, cool them under running water, peel, and cut them in halves.
- Prepare the Filling:
- Heat oil in a pan over medium heat. Add the chopped onions and sautΓ© until they turn translucent.
- Add the green chili (if using) and chopped tomato. Cook until the tomato becomes soft and the mixture is well combined.
- Add the turmeric powder, cumin powder, garam masala, red chili powder, and salt. Mix well and cook for another 2-3 minutes until the spices are well incorporated. Turn off the heat and let the mixture cool slightly.
- Prepare the Puff Pastry:
- Preheat your oven to 400Β°F (200Β°C).
- Roll out the puff pastry sheet on a lightly floured surface. Cut the sheet into 4 equal squares.
- Place a spoonful of the onion-tomato mixture in the center of each square. Place one egg half on top of the mixture, cut side down.
- Seal the Puffs:
- Fold each square over the filling to form a triangle or rectangle, pressing the edges together to seal. Use a fork to crimp the edges and ensure they are well sealed.
- Beat the remaining egg and brush it over the top of each puff to give them a golden, shiny finish.
- Bake the Puffs:
- Place the puffs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until the puffs are golden brown and crispy.
- Serve:
- Remove the puffs from the oven and let them cool slightly on a wire rack. Garnish with fresh cilantro.
- Serve warm with your favorite chutney or sauce.
Enjoy your homemade egg puffs!
