Ingredients:
- 1 cup plain yogurt
- 1 cup sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
- Pinch of salt
Instructions:
- Preheat the Oven: Preheat your oven to 350Β°F (175Β°C). Grease and flour an 8-inch (20 cm) round cake pan or line it with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together the yogurt, sugar, and eggs until smooth. Add in the vegetable oil and vanilla extract, and mix until combined.
- Add Dry Ingredients: Sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined. If you’re using lemon zest, fold it in now.
- Bake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. You can dust it with powdered sugar or serve it with fresh fruit if desired.
