Classic Cheesecake Recipe
Ingredients:
Crust:
- 1 1/2 cups graham cracker crumbs (about 12 full sheets)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Filling:
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour

Instructions:
- Prepare the Crust:
- Preheat your oven to 325Β°F (163Β°C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.
- Press the mixture into the bottom of a 9-inch springform pan, spreading it evenly and pressing it down firmly to create an even layer.
- Bake the crust for about 10 minutes, then remove from the oven and let it cool while you prepare the filling.
- Prepare the Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the granulated sugar and beat until combined.
- Add the vanilla extract and mix until incorporated.
- Add the eggs one at a time, beating well after each addition. Ensure each egg is fully incorporated before adding the next.
- Add the sour cream and flour, and mix on low speed until just combined. Be careful not to overmix.
- Assemble and Bake:
- Pour the filling over the cooled crust in the springform pan.
- Smooth the top with a spatula.
- Bake in the preheated oven for 55-70 minutes, or until the center is almost set but still slightly jiggly. The edges should be set and lightly golden.
- Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for about 1 hour. This helps prevent cracking.
- Chill the Cheesecake:
- Remove the cheesecake from the oven and let it cool completely at room temperature.
- Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. This allows it to fully set and develop its flavors.
- Serve:
- Before serving, run a knife around the edge of the springform pan to loosen the cheesecake.
- Release and remove the sides of the pan.
- Slice the cheesecake with a sharp knife, wiping the knife clean between each cut for neat slices.
- Top with fresh berries, berry compote, or whipped cream if desired.
