Caramel Apple Jam
Ingredients:
- 6 cups peeled, cored, and finely chopped apples (about 6-7 medium apples)
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 package (1.75 oz) powdered fruit pectin
- 4 cups granulated sugar
- 1 cup packed brown sugar
Instructions:
- Prepare the Apples:
- Peel, core, and finely chop the apples. Place them in a large, heavy-bottomed pot.
- Cook the Apples:
- Add water and lemon juice to the pot with the apples. Cook over medium heat, stirring occasionally, until the apples are soft (about 10-15 minutes).
- Add Spices and Pectin:
- Stir in the ground cinnamon and nutmeg. Sprinkle the powdered fruit pectin over the apple mixture and stir well. Bring the mixture to a full rolling boil over high heat, stirring constantly.
- Add Sugars:
- Add the granulated sugar and brown sugar all at once. Return to a full rolling boil and boil for exactly 1 minute, stirring constantly. Remove from heat and skim off any foam.
