Broccoli rabe and sausage lasagna is a delicious twist on the classic Italian dish. Here’s a simple recipe to try:
Ingredients:
- 9 lasagna noodles
- 1 lb (450g) Italian sausage, casings removed
- 1 bunch broccoli rabe, chopped
- 4 cloves garlic, minced
- 1 onion, diced
- 2 cups (500g) ricotta cheese
- 1 cup (100g) grated Parmesan cheese
- 2 cups (200g) shredded mozzarella cheese
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
- 4 cups (1 liter) marinara sauce
Instructions:
- Preheat the oven to 375Β°F (190Β°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat some olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add a little more olive oil if needed and sautΓ© the diced onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.
- Add the chopped broccoli rabe to the skillet and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
- In a bowl, mix together the ricotta cheese, grated Parmesan cheese, egg, dried oregano, and dried basil until well combined. Season with salt and pepper to taste.
- Assemble the lasagna in a 9×13 inch baking dish. Spread a thin layer of marinara sauce on the bottom of the dish. Place 3 lasagna noodles on top of the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the sausage and broccoli rabe mixture. Sprinkle with a third of the shredded mozzarella cheese. Repeat the layers, ending with a final layer of noodles, marinara sauce, and mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
