Ingredients:
- 2 cups broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (or panko)
- 2 large eggs
- 2 cloves garlic, minced
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions:
- Prepare the Broccoli:
- If using fresh broccoli, steam the florets for about 5 minutes until tender. If using frozen, cook according to package instructions and drain well.
- Once cooked, finely chop the broccoli and set it aside.
- Mix the Ingredients:
- In a large bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, minced garlic, onion powder, salt, and black pepper.
- Crack the eggs into the mixture and stir well until all ingredients are thoroughly combined.
- Form the Patties:
- Using your hands, form the mixture into small patties, about the size of a palm. You should get around 8-10 patties, depending on the size.
- Cook the Patties:
- Heat the olive oil in a large skillet over medium heat.
- Place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Serve:
- Once cooked, remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve warm with your favorite dipping sauce or as a side dish.
