Ingredients:
- 4 boneless, skinless chicken breasts
- 3 bell peppers (red, yellow, and green), sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare the Chicken: Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, paprika, oregano, thyme, and cumin.
- Sauté Vegetables: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers, onion, and garlic. Sauté for about 5 minutes until the vegetables are slightly softened. Remove from the skillet and set aside.
- Sear the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Place the seasoned chicken breasts in the skillet and sear each side for about 2-3 minutes until golden brown.
- Bake the Dish: Add the sautéed vegetables back into the skillet with the chicken. Drizzle the lemon juice over the top. If you don’t have an oven-safe skillet, transfer everything to a baking dish.
- Bake: Place the skillet or baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Serve: Remove from the oven, garnish with fresh parsley if desired, and serve hot. This dish pairs well with rice, quinoa, or a fresh salad.
